Rudy, I have come across some examples of how the requisitioning of rations were conducted, etc., by the paymaster, and there is mention of some such duties in the two volumes by Union Navy paymaster, William F. Keeler, who served aboard the USS MONITOR, in 1862, and the USS FLORIDA, 1863 - 1865. I did make some notes in the front pages of these two volumes, when I first read them years ago, and my notes indicate that the duties of a paymaster and his steward, including the requisition of rations, as well as distribution to the crew is covered on pages 92 and 93 of the first volume, ABOARD THE USS MONITOR: 1862, and on pages 14 and 15 of the second volume, ABOARD THE USS FLORIDA: 1863 - 1865.
Just a quick perusal, today, of the first volume (MONITOR) shows a sample of what they had for breakfast, lunch and dinner, on page 233 of that volume. I have seen mention of similar shipboard menus elsewhere but cannot now recall exactly where. A perusal of the many available first hand accounts of shipboard life will no doubt yield further such details.
