"Tin Willy" refers to canned meat or stew. I have not fount a specific reference to his company. Perhaps his company was known for obtaining canned met, eating canned meat or having accumulated a large amount of the cans--empty or full. The technology of canned foods was predates the Civil War by 15 to 20 years.
