Page 582, volume 21 of the ORN has the deck plan of the Confederate States ram TENNESSEE, and a couple of the other volumes include some plans for other CSN vessel.
I also recall that the Naval Historical Center's online site includes some plans of CS vessels, though I cannot remember which vessels, exactly.
